Hello and welcome to our June edition and a special welcome to our new subscribers.

Well 2009 is marching on and we are almost half way through – where has the time gone?

Isn’t it wonderful to have the press report on more positive news and fantastic that Australia officially is not in a recession despite all the negative press?

We have seen a great deal of consumer confidence in the last six months and have never doubted things were not as bad as reported.

June sales are looking very strong, brought on by the government’s 50% tax break for small businesses. If you are in business and contemplating changing over your vehicle(s) you should seriously consider an acquisition at this time. Talk to your tax advisor to see if you are eligible.

FORD FOR LIFE
There’s little other proof needed that the Ford Ute is one tough machine after five people escaped death in a freak head-on accident which saw a plane hit a four-wheel drive Ford Ute.

 

With three people inside the Ute, the light aircraft which had just taken off from a South African runway plunged from the sky, crashed into the Ute and burst into flames.

Photos of the disaster amazingly show the plane demolished and burning while the Ford Ute suffered only damage to the engine bay.

The driver of the Ute, Ms Vaulina, said she was lucky the vehicle was sturdy. Now that's an understatement if ever you heard one!

PEAR AND RHUBARB CRUMBLE WITH ALMOND AND OAT TOPPING


INGREDIENTS

4 pears, peeled, cored, sliced
1/2 cup (110g) caster sugar
juice of 1 lemon
500g packet frozen rhubarb pieces
1 cup (90g) rolled oats
1/2 cup (110g) brown sugar
50g butter, melted
1/3 cup (25g) flaked almonds
ice-cream, to serve

 

METHOD

1. Preheat oven to 180C or 160C fan. Grease a 6-cup ovenproof dish.

2. Cook pear, caster sugar and lemon juice in a large saucepan on medium heat for 4-5 minutes, stirring, until tender. Add rhubarb and cook another 3-4 minutes, until soft but still holds its shape.

3. Remove fruit from syrup with a slotted spoon and transfer to prepared dish. Taste and check for sweetness, sprinkling with a little extra sugar if needed.

4. Meanwhile, combine oats, brown sugar, butter and almonds in a bowl. Sprinkle over fruit and bake for 30 minutes, until golden and bubbling. Serve with ice-cream.

Tip: Save the syrup from the fruit and store in an airtight container in the fridge. It will keep for several weeks and you can use it to poach fruit for another occasion.
