Hello and a special welcome to our new subscribers.

I have just returned from two weeks annual leave and it was great to have had the second week, as week one just disappeared.

We took a road trip, via Mount Gambier, to Port Fairy then up to the Grampians, in the all-new Santa Fe. What a pleasure to drive! On its first tank of fuel – it runs on diesel – we travelled almost 900-kilometres, which is just superb for a brand new car.

On my return, the Hyundai ix35 had arrived and what a car it is! Come on down whenever you can to see for yourself, or else I welcome you to our special viewing on March 3rd at 6.30pm.

Another highlight for the month was receiving into stock the latest revised Ford Territory which now has Australia’s highest safety ANCAP rating.

ECO TIPS AND TRICKS: FIVE SIMPLE WAYS TO MAKE A DIFFERENCE


Tip #1  Educate Yourself, Educate Your Children

The best way to be more eco friendly is to learn more about how to make yourself your family more eco aware. There are countless online sources and some great easy-to-follow books. Get your children involved with understanding consumption cycles. Set up a ‘carbon chart’ and match their savings on the environment with something they want, making them understand the real cost of their toys and treats.

Tip #2  Buy Locally

This applies to all goods. if you buy something which is locally produced or made, less transport has been required to make that good or produce available to you; hence a reduced impact on the environment. A secondary benefit with food is that it will be often fresher and better for you than food shipped in over many miles.
 
Tip #3  Go Organic

Buying organic goods is not only good for you, but it’s good for the planet as well. Organic goods by their very nature do not use any artificial feeds, chemicals or additives; which mean a reduced environmental impact too boot!


Tip #4  Go Second Hand

Second hand has three big things going for it: firstly it’ll be cheaper on your pocket;  secondly it‘ll put no extra burden on the environment because any manufacturing costs of that item have already been incurred by the first purchaser; and thirdly, you’ll enjoy some one-off and original items, from retro furniture to vintage clothing. In essence buying second hand is recycling in its purest form.

Tip #5  Use Rechargeable Batteries

This is a simple one: each non-rechargeable battery essentially goes into landfill as is. A rechargeable battery however, if used with a good quality 'smart' charger should be good for about 1000 recharge cycles - this is 1/1000'th of the environmental impact. If you really want to be super green, get a solar powered charger. The other big win, is that you have batteries available for use 'in house', no need to make an additional trip to the shop.

RICOTTA AND SMOKED SALMON FRITTERS


INGREDIENTS

250g ricotta cheese
¼ cup (20g) grated parmesan
¼ cup (35g) self-raising flour
2 tablespoons chopped parsley
2 eggs, beaten
100g smoked salmon chopped
¼ cup (60ml) olive oil

Smoked salmon topping

1 avocado, seeded, peeled and sliced
1 tablespoon capers
1 tablespoon dill leaves
juice of 1 lemon
crème fraîche, to serve
 
METHOD

1. Combine ricotta, parmesan, flour and parsley in a bowl and season to taste.

2. Make a well in centre of mixture. Mix in eggs until well combined. Stir in half of salmon. Set aside.

3. Make Topping by combining remaining salmon with topping ingredients in a bowl and season to taste. Chill until required.

4. Heat oil in a frying pan on medium. Add heaped tablespoonfuls of mixture to pan. Cook for 1-2 minutes. Turn and cook for another 1 minute.

5. Drain on paper towel. Repeat with remaining mixture. Serve with crème fraîche and Smoked Salmon Topping.

This quantity makes 8-10 fritters.

Smaller fritters would make a fabulous finger food.
