Brighton European Supports Local School Event |
Black Rock Primary School recently hosted a parents’ night to raise funds for their school and Preston Motors Brighton European were only to glad to step in as the major sponsors.
The event, ‘A Night at the Races’ was held at the Black Rock Bowling Club and over 150 parents attended, making for a fun filled night.
Brighton European offered the prize of a weekend’s use of a Peugeot 308cc and got lots of people digging deep in the hope they’d win.
Congratulations to the winning couple; they will most definitely enjoy their Peugeot 308cc experience.
Well done also to the school for such a great event and raising some much-needed funds!

Simon Muir joined the Preston Motors Group 18 months ago and stepped into the Service Manager position at Brighton European some eight months ago now.
He’s come along at a great time for our dealership which is welcoming exciting new products from the Peugeot brand and experiencing growth in the area recently.
Simon has 23 years of automotive experience behind him and has extensive knowledge of a range of European brands so he is well placed to represent Peugeot in Australia.

If you can’t get to France anytime soon, why not bring it to you with this delicately delicious recipe for herbed ocean trout en croute.
It’s the perfect recipe to indulge in as winter breaks into spring. Enjoy!
INGREDIENTS
20 gm butter
½ small onion, finely chopped
½ small fennel bulb, finely chopped, trimmings reserved
1 garlic clove, finely chopped
Juice and finely grated rind of 1 lemon
1½ bunches spinach, trimmed and coarsely chopped
¼ cup each coarsely chopped dill and chives
4 skinless ocean trout fillets (130gm each), pin-boned
445 gm sour cream pastry or butter puff pastry
For brushing: eggwash
To serve: fennel salad and lemon wedges
HOT LEMON BUTTER
80 gm butter, coarsely chopped
1 garlic clove, finely chopped
Finely grated rind and juice of 1 lemon
1½ tbsp each coarsely chopped dill and chives

METHOD
1 Preheat oven to 200C. Heat butter in a frying pan over medium-high heat, add onion, fennel and garlic, sauté until starting to soften (2-3 minutes), add lemon juice and cook until evaporated (1 minute). Add spinach, toss until just wilted (1 minute), then transfer to a food processor. Add lemon rind and herbs, season to taste, process until finely chopped.
2 Season fish to taste, then spread spinach mixture over one side of fillets. Cut pastry into rectangles large enough to enclose fillets, leaving 1cm at each end. Wrap each fillet in pastry, brush edges with eggwash, then place, seam-side down, on a baking tray lined with baking paper. Press ends with a fork to seal, brush tops with eggwash. Make incisions in pastries, season to taste, bake until pastry is golden and fish is cooked medium (15-20 minutes).
3 Meanwhile, for hot lemon butter, thinly slice 2 tbsp fennel trimmings. Melt butter in a saucepan over medium heat, add garlic, lemon rind and fennel trimmings, season to taste, simmer until tender (3-4 minutes). Stir through herbs and juice just before serving. Spoon hot lemon butter over pastries, serve hot with a fennel salad and lemon wedges. |

Things have changed a bit since Peugeot made its name in the 1953 Redex Reliability Trial, but the quality of Peugeot has stayed the same which was apparent in the Redex Reliability Trail recently.
The Redex Trail was significant for endurance rallies in Australia as well as the French car marque, whose 203 model was driven by Ken Tubman and won the 10,500km slog around the country. Back in those days of course, the country was just a network of dirt tracks through remote areas.
This time however, bitumen roads met the two stock standard Peugeot 3008 compact all-wheel drives that undertook the challenge to re-run most of the 1953 trial in the Redex Tribute as part of their 200th anniversary.
The 3008 model is an outstanding example of a well-built car that had no problem with the 8500 15-day trek and proved that it’s far from an urban show pony. Indeed, it can emulate what its forebears did in the 203!
As for the economies provided along the way, the best so far was from Brisbane to Rockhampton with 5.2 and 5.3 litres per 100km for the 3008s!
